Travel to Central/ South America

I created a thread a while ago asking for recommendations for New York and Guadalajara. Having booked flights to NY, and subsequently feeling a bit uneasy about going, as much as a matter of principle (with the actions of the US Gov't and ICE etc) as anything, we've taken an opportunity to cancel.

So me and the missus are considering where to go instead (I'm still going to Guadalajara). We're going for approximately 1 week mid-May.

Costa Rica and Peru look interesting. El Salvador, Nicaragua, and Brazil too. Any suggestions?
