If you look at centre midfielders specifically, their average for duels is running at around 60%, there are several midfielders with duel win success between 70 and 80%.

Iwata actually has very high duel success so far this season.

The average for all duels is 50% though. For every player who wins 80% of duels one player will have a 20% win rate or very similar

Yes you are correct in that. It is a share predominantly of a few poorly performing centre mids and then some fullbacks, wingers and strikers propping up the lower ends.

On the whole centre mids are doing quite well, especially those who sit deeper which is who I have compared to Paik/Iwata/Doyle.

However, with duels won it does not have to be 50%. If someone wins 8/8 duels they have 100% for that game. 4 of those duels could have been against one player who was 0/4, except elsewhere on the pitch this player won 2/3 other duels so despite being 0/4 against someone on 100% their overall % could be greater than 0 and in this instance would be 2/7 so 28%.

The chance of winning a duel is 50/50 but given the nature of people having duels vs different players it could be quite scattered.
