Mahogany Rudder and Daggerboard in need of care

I’m refurbishing a mid 70 Sunfish that I recently acquired and need to give the rudder and daggerboard some love and care. I have to look very close to see any trace of varnish but the wood looks great on both items. The rudder has the dreaded crack on the screw but only on one side. I’m want to make sure that I refinish them in the way they deserve. Please see the attached photos and make any recommendations.
