Whilst it isn't exactly a hive of activity, I found plenty enough to do for a few days. Admittedly, mostly involving drinking or eating of some sort. There are a few places I have bookmarked to visit this year, too.
I'm not sure what you mean about only finding one bar run by an Aussie guy, but there are enough decent bars around - a few that will show the other Super League games, too.
Sundays are known to be a slow day in Perpignan though, with a lot of places closed for the day. It may be worth planning for that.
