As said before, it could easily be their style guide.

I understand them capitalising terms like First Team, Head Coach and the like as they are specific entities / roles within the club.

But they are not proper nouns so shouldn’t be capitalised unless used together with a name e.g. John Eustace Head Coach.

I probably need to get of my high horse and not get wound up about it.
