Fun to sail. What should I look at?

I’ve sailed a bunch of different boats - Oday 12 and Day sailor 2, Rebel sloop, International 110, Lark, and a Pacific Seacraft 40.

I’d like to buy a used small boat that’s a blast to sail with 1 or 2 crew. Can be righted by one 60 y/o female, and can sail well in light winds or something heavier. Something that can plane would be cool. Main and jib.

I thought about a 420 club, but was told that they are very tippy and you have to be on your toes at all times.
