Is it possible to swap road bike tires with gravel/cyclocross ones and vice versa?

I have this old fuji absolute that I've been using since a month ago. Since I'm new to riding bikes to commute to work I've had accidents and screwed up many times on the road-all of them were solo accidents haha. I'm not anyone who is interested in the cycling culture as I see bikes only as a means for transportation. Seeing road bike cyclist in the fetus position was nothing to new to me but I never really knew the reason why they did it. My handle bar is a flat bar and I'm always in the upright position. The other day I took on the fetus position to ride that way to work and I realized that I had more power to kick the pedal and I felt that I was going faster. I takes me around 36 minutes to get to work usually but I shaved off 4 minutes that day! I don't know if it's just my brain convincing to me to make me think that there is a difference in the position or whatever but it really made me think about SPEED.
So since my current bike is getting messed up constantly I was thinking of getting a new bike. I'm willing to spend $1,300 for a bike that offers speed and stability. Since I only commute to work I want to get there faster but at the same time I don't want little pebbles on the road make me do somersaults..I took a liking to the fetus position riding style and wanted a bike with those handlebars. I did some soul searching and found that performance road bikes and gravel/cyclocross bikes fit my needs. Road bikes are good for speed but I guess they're not as stable as gravel or cycloross ones so I thought of an idea. Gravel/cycloross bikes have big tires so I want speed why don't' I buy a road bike and swap out the tire with gravel/cyclocross ones? Or if I want a more sturdy frame I'd buy the gravel/cyclross and swap out the tires with a performance road bike tire ones?
