This Cottage Cheese Baked Eggs Recipe Is the High-Protein Breakfast Hack You Need

Starting the day with a high-protein, balanced breakfast can make all the difference in how you feel throughout the day. Egg bites are one of my favorite ways to accomplish this task. Whether you grab the pre-made ones from Costco, run through Starbucks for a fan-favorite order, or make your own, there are multiple ways to enjoy them.

I came across this six-ingredient version on @fitfoodiefinds' Instagram page, and I love how it incorporates two protein-packed ingredients into one delicious bite. And they're so easy to make—you can whip up multiple batches and refrigerate or freeze them for easy reheating in the morning. With nine grams of protein per bite and its delicious flavor, you simply can't beat it as an easy breakfast.

The recipe shows how to make them step by step, and it couldn't be simpler. Coat a muffin tin with cooking spray and dollop cottage cheese into each one. Pour beaten eggs into each well, sprinkle with salt and pepper and top with shredded cheese. Bake them until set and top with chopped chives to serve. @fitfoodiefinds suggests using a silicone muffin pan because the egg bites will pop right out, and the pan itself is easy to clean.

I was able to track down the recipe on Fit Foodie Find's website, where she shares the full ingredients list and directions. They're full of cheesy flavor and make a protein-packed breakfast option for those hectic mornings," and we couldn't agree more.

This Cottage Cheese Egg Bite Recipe Packs 9 Grams of Protein

Here's the full recipe that makes 12 servings:

Ingredients:

  • 12 large eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives

Directions:

  1. Preheat the oven to 350°F and spray a silicone mold or metal muffin tin with nonstick cooking spray.
  2. Whisk the eggs in a large bowl until thoroughly combined. Add the cottage cheese, salt, and pepper to the bowl. (The video caption states to dollop the cottage cheese into the muffin wells, then pour the beaten eggs in and season them; it'll work either way.)
  3. Fill each muffin cup with 1/4 cup of the egg mixture and top with shredded cheese.
  4. Bake the eggs for 18–22 minutes or until the egg cups are baked through. Serve with fresh chives.

Once cooled, the egg bites can be placed in an airtight plastic bag or container and stored in the refrigerator or freezer. When you're ready to serve them, pop them in the microwave and cook until the internal temperature reaches 165°F. If they're frozen, you'll need to cook them longer to reach a safe temperature.
