Dish

Octopus and confit baby potatoes salad

Ingredients:

600 g cooked octopus

4 baby potatoes

Paprika mayonnaise

Extra virgin olive oil

Salt

Fresh parsley

Preparation

Potatoes (confit):
Cook the potatoes slowly in oil over low heat until tender.

Octopus:
Sear the octopus on a hot griddle or pan with a little oil until lightly browned.

Plating:
Serve the potatoes as a base, place the octopus on top, and then add the paprika mayonnaise and fresh parsley.

40 ml premium gin

15 ml lemon juice

10 ml simple syrup

2 slices of cucumber

4 fresh mint leaves
