Octopus and confit baby potatoes salad

Ingredients:
600 gcooked octopus
4 baby potatoes
Paprika mayonnaise
Extra virgin olive oil
Salt
Freshparsley
Preparation
Potatoes (confit): Cook the potatoes slowly in oil over low heat until tender.
Octopus: Sear the octopus on a hot griddle or pan with a little oil until lightly browned.
Plating: Serve the potatoes as a base, place the octopus on top, and then add the paprika mayonnaise and fresh parsley.
