Short rib ravioli, where do I even begin with these beautiful little decadent pillows of pasta perfection? These have been so long in the making, I almost don’t even know where to start. But I guess the obvious place is, well, the beginning. Duh.I believe it was sometime about a year and half ago. Maybe for Dave’s birthday, or simply because we had some short ribs leftover, I can’t exactly remember. Whatever the case, I had a lightbulb moment to make ravioli and use the short ribs as filling.
